"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Coconut Pie - No Crust, by Jane Williams, is from The Hemphill Table,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 whole eggs 1 c. sugar 1 T. plain flour 1 c. milk 1 c. canned coconut or Baker's flaked in plastic bag 1 tsp. vanilla
Sift flour and sugar together; add eggs; beat until mixed, then add milk, coconut and vanilla. Pour into pie plate, greased and lightly coated with corn meal. (We used the cornbread mix which worked nicely.) Bake about 45 minutes at 350º. Pie will brown slightly around edge.
