3 c. fresh basil leaves
2 Tbs. garlic, pressed or minced
1/2 c. pine nuts, toasted (can also use walnuts)
3/4 - 1 c. olive oil
1 1/2 c. Parmesan cheese, grated

pepper or chili powder to taste

Directions:
Lightly toast pine nuts. In a blender or food processor, place basil leaves, pine nuts, and garlic. Slowly add oil. Use just enough olive oil to blend the ingredients into a slightly loose paste. (Experiment with different flavored olive oils.) Finally add Parmesan cheese and pepper of chili powder, depending on taste. Blend to mix. Transfer to air tight container or freeze in ice cube trays, then place frozen pucks in freezer bag.

Uses: Spread on pizza shells instead of tomato sauce, then add toppings. Serve with steamed vegetables. Mix with hot pasta, topped with roasted chicken slices, sautéed pine nuts, peppers and Parmesan.
