2 lbs. carrots, peeled and cut into 3 inch strips
1/2 tsp. salt
1/3 c. Parmesan cheese

pepper, freshly ground
garlic powder
olive oil

Directions:
Directions:
Preheat oven to 425º.

Coat jelly roll pan with olive oil. Sprinkle with salt, black pepper and garlic powder. Place carrots strips on pan. Sprinkle with Parmesan cheese and a little more salt and pepper.

Place in oven for 10 minutes, then turn with spatula and bake another 15 minutes until tender. (less time if carrots are sliced thinly.)
