2 ¼ c. flour
1 T. pumpkin pie spice
2 tsp. baking powder
½ tsp. salt
2 c. sugar
2 eggs
1 (15oz) can Libby’s Pure Pumpkin
½ c. vegetable oil
1 c. sweetened dried cranberries

Directions:
Directions:
Preheat oven to 350º. Use butter to grease 2 loaf pans, "flour" with granulated sugar. Set aside.
Sift flour, pumpkin spice, baking powder and salt together. Combine sugar, eggs, pumpkin and oil with fork until blended. Add pumpkin mixture into flour mixture by hand just until blended. Fold in cranberries.
Pour into prepared loaf pans. Bake 55 to 60 min or pick inserted in center is clean. Cool in pans 5 to 10 minutes, remove to cool completely.
