2 c. raw white rice - not instant
4 c. cold water
1/2 tsp.. salt
2 quarts milk
1 1/4 c. sugar
6 T. butter
3-4 T. cinnamon
1 c. brown sugar

Directions:
Directions:
Put rice in medium saucepan with cold water. Sprinkle with salt and cook on stove uncovered. Bring to a boil, while stirring to prevent sticking. Turn heat low and simmer until all water is absorbed - about 15 minutes. Add milk. Increase heat to high and bring to boil a second time. Continue to stir frequently to prevent scorching. Reduce heat and add sugar and butter. Cook about 2 hours on low heat, stirring frequently. It will continue to thicken. Then add cinnamon and brown sugar to taste.

Serve immediately or refrigerate and serve cold. The Swedish Christmas tradition is to hide a single whole almond in the dish, just before it is served. The person who finds the almond will have good luck all year.
