4-6 whole chickens
Hickory smoked seasoning salt

Use a charcoal fired smoker with a water tray (like an Old Smokey). Set up the cooker per the instructions. Include some hickory chips on the live charcoal.

Remove giblets from chickens and thoroughly wash. Very generously coat inside and outside surfaces of chicken with hickory smoked salt (it's almost impossible to use too much seasoning).

Put chicken on the cooker. Close cooker and let cook for 6-8 hours until the chicken is done (the leg will be easy to move).
