4 - 5 medium potatoes
3/4 c. milk, warm
1/2 stick of butter
1/2+ c. American or cheddar cheese, shredded

salt and pepper to taste
small container of cool whip or heavy cream, whipped

Directions:
Directions:
Preheat oven to 350º.

Pare potatoes. Cook covered in boiling salted water until tender, 15-20 minutes. Fork test for tenderness. Remove from heat and drain well. Mash with electric mixer on lowest speed. Gradually add hot milk as needed and continue beating until fluffy. Add salt, pepper and butter to taste.

Spread hot mashed potatoes in a greased 9 x 13 baking dish. Spread cool whip across the top and then sprinkle with cheese. Bake for 20 minutes, until cheese is melted and top is golden brown and bubbling.
