1 cup flour
11/2 tsp. baking powder
1/4 tsp. salt
2 cups blueberries
1/3 cup sugar
1 tsp. grated lemon rind
3/4 cup water
1/4 cup butter
1/2 cup sugar
1 egg, slightly beaten
1/2 cup milk
11/2 tsp. vanilla

Directions:
Directions:
Sift together flour, baking powder and salt. set aside. Combine berries, 1/3 cup sugar, lemon rind and water. Bring to a boil, stirring until sugar is dissolved. Reduce heat and simmer for 5 mins.
Cream butter, adding 1/2 cup sugar gradually. Beat until light and fluffy. Add dry ingredients with combined egg, milk and vanilla. Beat well. The batter will be thin. Pour hot blueberries into a greased 11/2 cup casserole dish. Spoon on batte. Bake in 375º oven for 30 mins.
serve warm with cream or ice cream.
