2 lbs. Diced Zucchini
2 T. All Purpose Flour
2 tsp. Baking Powder
1 tsp. Salt
1/2 Cup Milk
4 Beaten Eggs
1 Cup Chopped Green Chili
4 Cups Monterrey/Colby Cheese
2 T. Butter
1/2 Cup Dry Bread Crumbs

Directions:
Directions:
In large saucepan cook zucchini in boiling water until crisp tender. About 4 minutes. Drain cool ten minutes.
Combine in small bowl flour, baking powder, salt and milk till smooth. Blend in eggs and chili and cheese.
Transfer to 9 x 13 in greased pan.
Top with butter and bread crumbs.
Bake 325º for 40-45 Minutes
