Ingredients:  
2 pkgs. cornbread, cooked & cooled (can use jalapeņo cornbread)
1/2 cup mayonnaise (I use Miracle Whip)
1 Large bell pepper, finely chopped
1/2 tsp. garlic powder
1 Large jar chopped pimento
1 Large chopped tomato (optional)
2 bunches green onions, chopped
1/2 cup cooked, crumbled bacon
2 1/2 cups grated cheddar cheese (optional)

Directions:
Directions:
Crumble cornbread into large bowl. Mix in pepper, pimento, green onion, cheese, mayonnaise, & garlic. Refrigerate for several hours. Before serving, add tomato & bacon if desired.
