Zucchini Bread Recipe

3 eggs
2 c Sugar
1 c vegetable oil
2 c Grated, peeled raw zucchini
1 T vanilla
3 t cinnamon
3 c flour
1 t salt
1 t baking soda
1/4 t baking powder
1 c nuts

Beat eggs until fluffy. Add sugar, oil, zucchini, and vanilla. Mix lightly but well. Combine flour, salt, baking soda, baking powder, and cinnamon. Add to egg- zucchini mixture. Stir until well blended. Add nuts. Pour into two 9 x 5 x 3 inch loaf pan. Bake at 350F for 1 hour. Cool on a rack.
