1 c oil
3 eggs
2 c sugar
2 tsp vanilla
3 c flour 1 tsp salt
2 c grated zucchini
1 tsp soda
3 tsp cinnamon
1/2 c nuts
1 can crushed pineapple (large can - drainid and squeezed dry)

Directions:

Beat eggs well. Add oil, sugar, vanilla, zucchini and mix well. Add flour and other ingredients. Bake 1 hour at 325º in greased and floured pans (2 loaf or 1 bundt). Allow to cool 20 minutes before removing from pans.

I always thought my Choc Zucchini Bread was the best ever, but this is moist and very flavorful. The recipe is from Becky Snider's mother-in-law.
