1 (8 oz) can crushed pineapple, undrained
2 cups boiling water
1 (11 oz) can mandarin oranges, drained
1 3/4 cups cool whip, thawed
1 (8 oz) or 2 (4 oz) pkgs orange jello
1 1/2 cups miniature marshmallows
1/2 cup coconut (optional)

Drain pineapple, reserving juice. Add cold water to juice to measure one cup. In large bowl, add boiling water to jello and stir for two minutes until completely dissolved. Stir in measured liquid. Refrigerate 1 1/4 hours or until slightly thickened. Stir in whipped topping with whisk until smooth. Refrigerate ten minutes. Stir in pineapple, oranges, marshmallows, and coconut. Spoon into a 6-cup mold. Refrigerate three hours or until firm. Unmold.

You can make it in a large bowl, instead of a mold. Good at Easter and other special occasions.
