2 eggs
1/3 cup soft shortening
2 ripe bananas
2/3 cup sugar
1/4 teaspoon vanilla
1-1/2 cups chopped walnuts
1-3/4 cups flour
1-1/4 teaspoons cream of tartar
3/4 teaspoon baking soda
1/2 teaspoon salt

Directions:

Mix together first 5 ingredients and then fold in nuts. In a separate bowl combine next 4 dry ingredients. Combine all and pour into a greased and floured loaf pan. Bake at 350º for 45 minutes.

Dad loves nuts so I put lots in. You can eliminate the nuts or add raisins or chopped cranberries. My girls are not big fans of banana bread but they love this one. One hint - double the recipe because it goes fast - especially in the Perroots family.
