2 c. buttermilk 2 eggs, separated 1 1/2 c. flour 2 1/2 tsp. baking powder 1 tsp. soda 1/2 tsp. salt 3 T. melted butter 1 tsp. vanilla
Blend buttermilk and egg yolks. Mix flour, baking powder, soda and salt. Gradually add dry ingredients to buttermilk mixture. Do NOT overmix. Stir in butter and vanilla. Beat egg whites until stiff but not dry. Fold into batter. Bake in preheated waffle iron until batter stops steaming and waffles are brown.
