1 lg can Pineapple Juice (46 oz)
1 can Cream Of Coconut (12 oz, chilled)
1 bottle Club Soda (32 oz)
1 qt. Vanilla Ice Cream

Directions:
Directions:
Combine pineapple juice and chilled can of cream of coconut. Add scoops of ice cream, the add club soda. Can add rum if you wish (I offer it on the side).

This is good anytime but especially with Mexican food.
