2 Eggs
1 c. Flour
1 c. Milk
1 1/2 t. Baking Powder
1/2 t. Salt
1 t. Vanilla
1 t. Cinnamon

Directions:
Directions:
Through everything in a blender or food processor and blend well. Pour mixture into a pie pan or shallow bowl. Using firm bread, dip and drain briefly, then fry in a skillet. Keep warm in 150 oven until all are cooked. Dust with powdered sugar and apricot jam

Also good with butter, powdered sugar and fresh lemon juice squeezed over top.
