3 or 4 sweet potatoes 1/2 cup butter (soft) 2 cups sugar 4 eggs 1 tsp. cinnamon 1/2 tsp salt 1/2 tsp. nutmeg 1 tall can evaporated milk (13 oz) 2 unbaked pie shells
Boil potatoes until soft and mash in mixing bowl. Add sugar, butter and spices and beat in eggs one at a time until smooth and add milk and salt. Pour into pie shells and bake at 375º for 70 minutes or until knife comes out clean.
Eva Mae & I always baked on Wednesdays while living in Oak Hill, just north of Cape Canaveral.
