Lentil Soup Recipe

2 c dried lentils sorted and washed
1 clove garlic minced
1 medium onion sliced
2 large carrots sliced
1 stalk celery sliced
4 c water
1 t soy sauce
2 T chopped parsley
1 t salt
1/2 t pepper
1/4 t thyme
1 bay leaf
1 28oz can whole tomatoes

Cover the lentils with water and bring to a boil in a large sauce pan for 2 minutes. Remove from heat and allow to stand covered for 1 hour. Add remaining ingredients except for the tomatoes. Bring to a boil and turn to simmer for 1 hour. Stir in tomatoes and simmer for 15 additional minutes.
