German Potato Salad Recipe

5 lbs. red potatoes, cooked & peeled
1 medium onion, finely grated
3 stalks celery, chopped fine
1 lb. smoked bacon, chopped fine
2 tsp. celery seed
2 tsp. chopped pimiento (optional)
1 tsp. coarse grind black pepper
4 hard boiled eggs
Grandmother Koetterheinrich Sauce:
2 slices bacon
2 tbsp. flour
2 tbsp. sugar
1/2 c. vinegar
1/2 c. water
Fry out the bacon, add flour, vinegar, sugar, & water. Take the pan off the stove to do your adding.

Slice or dice potatoes into 1/2" pieces. Saute bacon in a skillet until light brown & crisp. Drain bacon, reserving grease.
Add to the potatoes the bacon, onion, celery,celery seed, pepper & pimiento.
In saucepan, heat 1/2 c. of the reserved bacon grease with the 2 tbsp. flour. Stir till smooth, when smooth, add the 2 c. water. Keep stirring until the mixture is hot and glossy. Add 1/2 c. vinegar, sugar, and 2 tsp.salt. Bring to a boil, and boil for 2 minutes; remove from heat.
Ladle sauce over potato mixture. Mix well. Serve immediately.
