2 1/2 cups sugar free, fat free vanilla OR strawberry ice cream
1/2 tsp. ground cinnamon
18 graham crackers

Directions:
Directions:
Line an 8-inch square pan with heavy-duty plastic wrap. Set aside. Combine ice cream and cinnamon; stir until blended. Spread evenly in prepared pan; cover and freeze until firm. Cut ice cream into 9 squares; place each square between 2 graham crackers. Wrap in heavy-duty plastic wrap; store in freezer. To serve, unwrap desired amount of sandwiches. Note: Yield: 9 servings. Carbohydrate 23g per serving. For a variety, use another flavor of sugar-free, fat-free ice cream besides strawberry.
