2 cups sugar-free vanilla ice cream
1/4 cup chopped almonds
1/2 cup sugar-free chocolate syrup
Fresh mint sprigs (optional)

Directions:
Directions:
Spoon 1/4 cup ice cream into each of 4 parfait glasses; top each with 1 tbs. chocolate syrup. Repeat procedure with remaining ice cream and chocolate syrup. Sprinkle 1 tbs. chopped almonds over each serving. Garnish with mint sprigs if desired. Serve immediately.
Note: Yield: 4 servings. May also use chopped pecans, if desired.
