Chicken Satay:
1 Tbsp. Creamy Peanut Butter
1/4 C. Soy Sauce
1/4 C. Lemon or Lime juice
1/2 Tbsp. Brown Sugar
1 Tbsp. Curry powder
1 cloves Garlic, chopped
1/2 tsp. Hot Pepper sauce
3 skinless, boneless Chicken Breast halves, cubed

Hot Peanut Sauce:
4 Tbsp. Peanut Butter
4 Tbsp. hot Water
2 Tbsp. Soy Sauce
1-1/2 Tbsp. Brown Sugar
1/4 tsp. Cayenne Pepper
1-1/2 tsp. Lemon juice

Chicken Satay:
In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and hot pepper sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2 hours, overnight is best.
Preheat a grill (a George Foreman grill or a grill pan will work too) to high heat.
Weave the chicken onto skewers, then grill for 5 minutes per side.

Hot Peanut Sauce:
In a small saucepan, combine peanut butter and water; mix until a smooth paste forms. Stir in soy sauce, then brown sugar, cayenne and lemon juice. Heat on low-medium heat, mix by hand until well combined and smooth.
Serve with Chicken Satay skewers.
