6 T. olive oil
1 large ripe tomato, minced
1 T. fresh parsley, chopped
1 1/2 lb. shrimp (peeled and deveined)
2 zucchini sliced into 1/2 " discs
1 red onion sliced into wedges
salt and pepper

Directions:
Directions:
Combine 3 T. oil, tomato, 1 t. salt, and parsley in a disposable pan. Set pan over hot grill and cook, stirring occasionally, until hot. Remove from heat. Thread shrimp, zucchini, and onion onto skewers. Brush with oil and season with salt and pepper. Grill on high about 5 minutes. Flip and grill 1 to 2 minutes longer. Remove skewers and plan in pan with sauce.
