non-stick cooking spray
1/2 c. buttermilk
1/2 t. hot-red-pepper sauce
1/4 c. flour
3 T. fine dry bread crumbs
3 T. cornmeal
1/2 t. salt
1/4 t. pepper
1/4 t. paprika
1 T. unsalted butter, melted
sprinkle of garlic
6 skinless chicken pieces (2 lb.)

Directions:
Preheat oven to 400º. Grease large baking pan. Mix buttermilk and pepper sauce. On waxed paper, mix dry ingredients. In small cup, melt butter. Dip chicken into buttermilk, then flour mixture. Place on pan; drizzle with butter. Bake 45 minutes, until crispy.
