15.5 oz. can apricot halves, 10 pieces
15.5 oz. can pear halves, 10 pieces
32 oz. can pineapple rings, 20 pieces
1 jar maraschino cherries with stems
3/4 c. brown sugar, tightly packed
1/3 c. butter
1/2 tsp. curry powder

Thoroughly drain all fruit and set aside. In a medium saucepan, melt butter; then add sugar and curry powder. Stir to mix. Place fruit into a ziploc bag, and pour sugar mixture over all. Marinate overnight, turning occasionally.

Arrange fruit "stacks" in a well greased 9 x 13 baking dish. Begin with pineapple ring, Place pear half or apricot half on top of the pineapple ring. Top with a cherry in the "well" of the pear or apricot. Pour marinade over the fruit stacks. Bake in 350º oven for 50 - 60 minutes. Serve in stacked form. Fruit can be grilled instead of baked (do not grill cherries). Stack to serve. Good side to ham or pork.
