12 cups bread, cubed (I found some "everything" bread that was great in this)
8 oz bacon cut into 1/2" pieces
1 2lb butternut squash (or a mix of 2 types) peeled seeded and cut into 1/2" chunk's (I microwaved the squash and let it cool before cutting and peeling)
3 stalks celery chopped
11/2 cups onion chopped
2 tbsp fresh sage leaves
salt, pepper,lawerys seasoning salt and rosemary to taste.
3 cups chicken broth

Cook bread cubes on 2 cookie sheets for 30 min at 325 º, stirring and rotating ... then cool
Fry bacon till crisp. Drain all but 3 tbsp. remove bacon and add all the veggie. cook on medium heat for 15 min or until soft (I like the veggie slightly crunchy).
Add seasonings, broth and bacon, mix and put in a covered baking dish.
Bake for 20 min covered at 325º, remove cover and bake 25 min longer.

Jess and I found this recipe while she was in the hospital for one of her many week long stays! We enjoyed this together with family for Thanksgiving dinner 2006. I know it will forever be on my Thanksgiving menu.... I hope you enjoy it and remember all the things we have to be thankful for!
