All ingredients are to be at room temperature.

3 c. warm water
3/4 c. honey
2 or 3 pkg. yeast (allow to soften for 5 min. or longer)
1/4 c. oil, butter or margarine
5 c. unsifted whole wheat flour
1 scan T. salt

Directions:
Directions:
Combine in a large bowl, water, honey, yeast. Add oil, flour and salt. Beat by hand 100 or more strokes or 7 min. with an electric mixer on low. If not beaten enough, the bread will be heavy. Add and stir well 2 or 3 more cups whole wheat flour (enough to make a stiff dough). Sprinkle about 1 cup flour over the bread board and turn dough onto it. Knead until dough is smooth and elastic. Use more flour if needed to prevent sticking. Put dough into an oiled bowl, smooth side down. Then turn greased side up. Cover and let rise again until double in size (20-30 min.) Knead to original size. Use 3 - 1 lb. loaf pans or 2 - 1 1/2 lb. pans. Divide dough into 2 or 3 parts. Shape each loaf by pressing into an oval. Grease pans with shortening not oil. Put loaves in pans, cover and let rise about 30 min. (Dough will continue to rise in oven.) Bake in preheated 350º oven. Turn onto wire racks to cool.
