5 cups old fashion oats, uncooked
1 cup shredded coconut
1/2 cup cashews, finely chopped
1/2 cup wheat germ
1 tsp ground cinnamon
1/2 cup honey
1/3 cup canola oil
1 tsp pure vanilla extract
1 1/2 cup dried apples
1 tbsp brown sugar

Preheat oven to 350º. Spread oats in an ungreased 13x9 inch baking pan and heat 10 minutes. Combine oats, coconut, cashews, wheat germ and cinnamon in a large bowl. Stir in honey, oil and vanilla. Mix until dry ingredients are well-coated. Spoon into same baking pan and bake 30-35 minutes, stirring often to brown evenly. Cool. Toss apples in brown sugar. Stir into granola. Store tightly covered in refrigerator.

I haven't been adding the coconut in recent years and have cut back on the oil. The amount of dried fruit is what I use but you may alter to your preference.
