3 egg yolks
1 whole egg
3 Tbsp cold water
1 tsp salt
2 C sifted flour

Directions:
Directions:
Beat until light; 3 egg yolks and 1 whole egg, beat in 3 tbsp cold water and 1 tsp salt. Stir and work in with hands (we use the food processor or heavy mixer) 2 cups sifted flour. Divide dough into 3 parts. Roll out each piece as thin as possible (paper thin) on lightly floured surface. Place between 2 towels until dough is partially dry. Roll up dough as for jelly roll. With a thin sharp knife cut into stripes of desired widths. Shake out strips and allow to dry before using or storing.

This recipe is shared by Tami & Sandy. We use a pasta machine to roll them out and to cut them. Gram never went by a recipe but this is what we have used for the last 10 years.
