1/2 cu butter
dash salt
1 tsp baking POWDER
1 lb grated Jack cheese (or cheddar)
1 cu flour
1 pint (2 cu) low fat small curd cottage cheese
ham, bacon, mushrooms or anything else you want to put in
1 small can diced green chilis (totally optional!)

Melt butter in 13 x 9 x 2 pan. Beat eggs lightly in large bowl. Add flour, baking powder, salt and blend. Add melted butter, cottage cheese, cheese, and dump in meat or whatever. pour into pan. Bake @ 400º for only 15 min, then reduce heat to 350º and bake another 35 - 40 min, testing with a pick to see if it is reasonably dry and firm before removing. let it acquire a browning on top if desired.
