1/2 c. brown rice, uncooked
3/4 c. peas - frozen
3/4 c. corn - frozen
2/3 c. French dressing
1 red pepper, cored, seeded, diced
1/2 c. salted peanuts
1 onion, peeled grated

salt and pepper

Directions:
Directions:
Cook rice according to package directions until tender. In a microwaveable bowl, cook peas and corn until just tender. Drain thoroughly. Add rice to the vegetables and toss with half of the French dressing while vegetables and rice are still hot. Set aside until cool. Just before serving, add remaining ingredients and dressing. Mix well. Serve cold.
