3 eggs beaten well
1 1/2 cups sugar
1/2 cup oil
3 tsp. vanilla
2 1/2 cups flour
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 heaping tsp cinnamon
2 cups grated zuccini
1 cup walnuts, chopped

Directions:

Preheat oven to 350 F. Grease two loaf pans. Beat eggs, sugar, oil & vanilla together in a large bowl. In a separate bowl mix together flour, baking soda, salt, cinnamon. Combine egg mixture to dry ingredients until well blended. Add zuccini & nuts. Pour into greased pans. Bake for 1 hour.
