1 1/2 cups sugar
3 large eggs
1 cup vegetable oil
3 3/4 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Directions:
Directions:
Beat the sugar and eggs together. Add the rest of the ingredients and blend together. Divide into 2 bowls (or make one big recipe all the same flavor).

Add whatever flavor ingredients you want to each bowl, such as chopped dried fruit and /or nuts, chocolate chips, dry chocolate powder, or peanut butter. Do not measure--just add as much as you want.

Form each as a log (about 5" x 10" long). Bake on a cookie sheet at 350º for 25 to 30 minutes.

Slice the biscotti into 1 1/2 inch sticks, lay on the cut side and put back into the overn for another 5 to 9 minutes.

On dried fruit log, sprinkle with sugar and cinnamon mixture for more flavor. If you want it drier, bake it in the oven longer. Cool and enjoy with your favorite hot beverage.
