1 lb. green split peas
1 carrot
1/2 large onion, sliced
1/2 lb. bacon cut into 1 inch pieces
salt to taste
1 stalk celery, cut into large pieces

Directions:
Directions:
Put all ingredients except salt into a large pan. Cover with water (about 3 times the amount of vegetables) and simmer until tender, about 2 hours. Add water during cooking, if needed. Press everything through a colander. Discard pulp. Add water if desired. Heat and serve.

Optional: Melt 2 tablespoon of butter, slowly add 1 1/2 tablespoons flour. Slowly add 2 cups scalded milk. Combine with pea mixture.
