2 Chicken Breasts, cooked an cubed
1 Head iceberg lettuce
3 Green onions, diced
1 C diced celery
1 small cumber, sliced
3 Tbs toasted celery seed
1/3 lb MAIFUN Rice Sticks
1 C Dark Roasted Peanuts

6 Tbs Sugar
7 Tbs Rice Vinegar
2 tsp salt
1 tsp msg (may leave out)
1/4 tsp white pepper
1 tsp lemon juice
1/4 tsp five-spice powder
1/4 C oil

Mix all dressing ingredients together and marinate chicken in dressing overnight.
Fry Rice Sticks in 1/2 inch oil just until they balloon. Use small amounts at a time. Do not let them brown. Drain on paper towels and break up into salad bowl.
Cut up veggies and add to rice sticks in bowl. Add chicken and dressing mixture. Add celery seed and toss all together. Sprinkle peanuts on top.
