1/2 c. margarine, softened
1/ 2 c. sugar
2 eggs
3/4 c. applesauce
1 3/4 c. flour
2 tsp. baking powder
1/2 tsp. salt

2 tbsp. margarine, melted
3 tbsp. cinnamon sugar

Directions:
Directions:
In large bowl, cream the margarine and sugar until smooth. Add the eggs, one at a time, and beat until light and fluffy. Beat in applesauce. Add flour, baking powder, and salt and stir just until moistened.
Spoon into a mini-muffin tin and bake at 425 for 10 minutes. When cool, dip each muffin into melted margarine and then roll into cinnamon sugar.
