1 lb boneless beef round steak, cut 3/4 in thick
2 tbsp all-purpose flour
1/4 tsp salt
1/4 tsp pepper
1 tbsp cooking oil
1 16 oz can tomatoes, cut up
1 small onion, sliced and separated into rings
1/2 cup sliced celery (1 stalk)
1/2 cup sliced carrot
1/2 tsp dried thyme, crushed
1/2- 1 tsp Kitchen Bouquet for coloring, if desired

1. Trim fat from meat. Cut into 4 serving-size pieces.
2. Combine the flour, salt, and pepper. With the notched side of a meat mallet, pound flour mixture into meat.
3. In a large skillet, brown meat on both sides in hot oil Drain off fat.
4. Add undrained tomatoes, onion, celery, carrot, and thyme. Bring to boiling. Reduce heat. Cover and simmer about 1 1/4 hours or till meat is tender.
5. Skim off fat. Serve with rice, noodles, or potatoes.

Oven directions: 1. After browning meat in skillet, transfer to 2 qt square baking dish.
2. In same skillet, add undrained tomatoes, onion, celery, carrot, and thyme. Bring to boiling, scraping up any browned bits. Pour over meat.
3. Cover and bake in a 350 º oven about 1 hour or till tender.

Crockery-cooker directions: 1. Trim and cut meat as above. Skip flouring and pounding of meat. 2. Brown meat in hot oil.
3. In 3.5- 4 Qt. electric crockpot, put onion, celery, and carrot. Sprinkle with thyme, 2 tbsp quick-cooking tapioca, salt and pepper.
4. Pour undrained tomatoes over vegetables.
5. Add meat. Cover and cook on low heat setting for 10-12 hours.
