1 pkg. white and wild rice
1/2 lb. bulk pork sausage
1/2 c. celery
1/2 c. herb seasoned stuffing mix
3 T. butter
2 1/2 oz. sliced mushrooms
1/2 c. water
1 tsp. instant chicken bouillon
4 Cornish game hens, thawed
4 T. butter, melted

Cook rice. In a small skillet, fry pork sausage. Combine fried sausage with celery, stuffing mix, mushrooms, and melted butter. Boil water and add bouillon, stir until dissolved. Stir bouillon and rice into sausage mixture. Rinse hens. Drain and pat dry. Fill body cavity with about 3/4 cup stuffing. Do not pack. Fasten with skewers or string. Place breast side up on rack in roasting pan. Brush with melted butter. Bake at 350º 1 to 1 1/2 hours or until tender, basting occasionally.
