1 can (1 lb. 10oz.) whole green chiles (about 18)
1 lb. Monterey Jack cheese (cut into strips 1x3 ¼ )
5 large eggs
¼ c. flour
1¼ c. milk
½ tsp. salt
½ lb. grated cheddar cheese
Pepper and Paprika to taste

Carefully rinse seeds from chiles with cold water. Spread chiles in single layer on paper towels. Pat dry. Slip a strip of Monterey Jack cheese into each chile.

Using mixer, beat eggs. Gradually add flour, beating until smooth. Add milk, salt, and pepper. Beat thoroughly. Arrange 1/2 of stuffed chiles into well greased, shallow baking dish (7x13) sprinkle with 1/2 of cheddar cheese and paprika. Repeat layers ending with cheese.

Bake uncovered at 350º for 45 minutes or until knife in custard comes out clean.
