1 small onion, chopped
2 tbsp olive oil or butter
2-1/2 cups water or chicken broth
1 tsp salt
Ground pepper to taste
2 cups potatoes, diced
2 cups cabbage, chopped
1 4oz package Ranch dressing Mix (can substitute 1/2 tsp Thyme and 1/2 tsp Basil)
2-1/2 cups milk
1/2 tsp garlic, crushed (optional)
3/4 cup mashed potato flakes for thickening (optional)
4 slices crisp bacon, crumbled (optional)

Directions:
Directions:
Cook onion on medium heat in butter or oil until softened. Add remaining ingredients, except for milk, and stir. Simmer until cabbage and potatoes are tender. Add milk and heat through. To thicken, if desired, add potato flakes.
