2 or 3 eggplants
2 eggs, beaten
Romano cheese
Italian bread crumbs
salt
pepper

Directions:
Directions:
Peel the eggplants, cut into small chunks and boil until tender. Drain. Add the beaten eggs, cheese, crumbs, salt and pepper. Make into paddies and fry. Add butter before serving.
