6 oz. semi sweet chocolate
2 oz. bittersweet chocolate
3/4 c. unsalted butter
3 whole eggs plus 3 egg yolks
3/4 c. sugar
3/4 c. flour

whipped cream or ice cream (optional)

Directions:
Preheat oven to 475.

Butter eight 6 oz. ceramic ramekins and dust with flour. In double boiler, melt butter and chocolate. Set aside to cool. Use an electric mixer to beat eggs, yolks and sugar until pale yellow and a ribbon forms when beaters are raised. Add flour to egg mixture and beat for 3 minutes. Add reserved, cooled chocolate, and beat 2 minutes more.

Divide batter between the 8 ramekins. Refrigerate for 1 hour. Line ramekins on a cookie sheet and bake at 475 for 10 - 12 minutes, or until they are puffed up and don't jiggle when moved. Serve immediately with whipped cream or Ice cream.
