1 medium onion, chopped
1/2 small green pepper, chopped
3 tbsp. margarine
1 can (16 oz) stewed tomatoes ( I often use diced tomatoes)
1 tsp. salt
1/8 tsp. pepper
3 cups white rice (cooked according to package directions)

Directions:
Directions:
Saute onion & green pepper with margarine until onion is tender. Stir in tomatoes, salt, pepper and cooked white rice. Simmer uncovered over low heat until heated through, about 15 minutes.
