1 c. uncooked rice
1/4 c. margarine or oil
1 medium onion, thinly sliced
1/2 medium pepper, diced
2 c. stewed tomatoes, with juice
1 tsp. salt
dash of pepper
1 c. water

Directions:
Directions:
Heat margarine or oil in saucepan. Add onion, pepper and rice. Cook and stir over high heat until lightly browned. Add tomatoes, water, salt and pepper. Mix well. Bring gently to a boil. Cover tightly, lower heat and simmer gently for 30 minutes.
