"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Seasoned Coating Mix for Chicken, by Sue Cornwell, is from Mama G's Favorites,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 cup bread crumbs 1/4 cup flour 1 tsp. poultry seasoning 1 tbsp. paprika 1 tsp. salt 1/2 tsp. pepper 1/4 tsp. onion powder 1/4 cup melted butter or margarine thawed chicken parts--thighs, legs, etc.
Recipe can be doubled. Combine all dry ingredients in a brown paper lunch bag or similar bag. Shake bag until mixed well. Melt butter or margarine and roll chicken parts in it to moisten. Place moistened chicken part one at a time into bag to coat. Bake on greased pan 350º for 1 hour. Discard unused coating mix. An electric skillet may also be used. Heat oil in electric skillet until hot. Place seasoned coated chicken parts into hot skillet and fry approximately 45 minutes and turning pieces as chicken becomes golden brown and juices run clear. Discard unused coating mix.
