2 cups self-rising flour
1 tsp. baking powder
Two and one half pecan nuts, finely ground
2/3 cup packed brown sugar
1 egg
1/4 cup maple syrup
1 cup milk
4 Tbsp. butter, melted
3 - 1/4 oz. dark chocolate, coarsely chopped into very small pieces
Chopped pecan nuts (to decorate)
Paper cases to line 12 hole muffin pan

Preheat oven to 400º. Sift flour and baking powder into a bowl, then stir in the ground pecan nuts and sugar. Put the egg, maple syrup, milk, and melted butter into a separate bowl and beat well. Beat the syrup mixture into the dry ingredients, then fold in the chocolate pieces. Spoon the muffin mixture into the paper cases in the muffin pan, and sprinkle the surface of each muffin with extra chopped pecan nuts. Bake for 18 to 20 minutes until risen and golden. Let cool on a wire rack. Can be served warm.
