2 c. chicken pieces
1 c. golden raisins
4 oz. water chestnuts, sliced
1/2 c. dry rice
1 1/2 c. mayonnaise
1 T. curry powder
1 T. lemon juice
1/2 red onion, chopped

Directions:
Directions:
Cook chicken, then cut in bite sized pieces, removing skin and bones. Cover raisins with boiling water and steep for 5 minutes. Drain well. Cook rice according to package directions.

In a small bowl, mix mayonnaise, curry and lemon juice. Combine chicken, raisin, rice and mayonnaise mixture in a large bowl. Cover and chill overnight. Add more mayonnaise before serving if dry.
