1/2 medium head iceberg lettuce, chopped
1/2 cup celery, chopped
1/2 cup red or green pepper, chopped
1/2 cup onion, chopped
10 oz frozen green peas, cooked and drained
1 cup mayonnaise
1 Tbsp sugar
1 1/2 cups mild cheddar cheese, shredded
4 strips bacon, crisp-cooked and chopped (or one jar Real bacon)

Layer ingredients in order listed in 9x13 casserole dish. Cover and refrigerate overnight.

Not sure why this is called Seven Layer Salad, since it has nine layers. I don't usually add the peppers, onions or sugar to mine, but sometimes do add chopped broccoli or cauliflower. I take this dish to Lerue's for Thanksgiving every year, where we always have a wonderful Thanksgiving feast.
