1/4 cup sugar,
1/2 small red onion,
1-1/2 tsp. salt,
3/4 tsp. dry mustard,
1-1/2 cup canola oil,
1 T. poppy seed,
3/4 cup white vinegar,
1 bag of prewashed spinach,
3/4 lb. Swiss cheese, grated,
1 cup cottage cheese,
1/2 lb. bacon, cooked and crumbled,
2 cups freshly sliced mushrooms

Dressing***(see note) Place in blender, sugar, salt, mustard, and vinegar. Slowly add the oil and then the poppy seed. Slice the red onion thinly and pour half of the dressing over the onion. refrigerate.

Salad: Put spinach leaves in a bowl, add the Swiss cheese, bacon, cottage cheese and mushrooms. Add the onion dressing and the remaining dressing just before serving.

***Make the dressing 1 day before you serve your salad. I get lots of requests for this salad. The original recipe called for 1/2 cup sugar, but I found it too sweet, so I cut the sugar in half. I'm not a big lettuce fan, so this allows me to have my greens and eat it too. ENJOY!!
